Eve’s Yummy Pudding!

Congratulations to my best friend Samantha and her fiancee Luke on their engagement today! Wow, how exciting!!!

Today I’ve made 12 jam tarts, Glen had one the girls had one each, I scoffed the rest! I’m also about to eat roast lamb and Merina and I have made Eve’s pudding for after! Eve’s pudding is an old fashioned classic, I love puddings in the winter (especially 7 months pregnant!). This is really easy and doesn’t need much attention, tastes great with cream or custard!

  • 2/3 cooking apples
  • 175 g sugar
  • 110 g butter
  • 2 eggs beaten
  • 150 g self raising flour


  1. Pre heat the oven to Gas mark 5/190 c.
  2. Peal, core and slice the apples but not to thin about 1/2cm thick. Put the apples and 60 g of the sugar in an oven proof dish/bowl (I use a pyrex dish) and stew in the oven while you make this rest of pudding
  3. Meanwhile cream the butter and remaining sugar until pale and fluffy. Add the beaten eggs slowly and mix well, finally add the flour. If the mixture is to firm add you can add a little milk.
  4. Pour the batter/cake mixture over the apples and cook in the oven for about 30 minutes. I always test if its cooked by putting in a sharpe knife if it comes out clean its cooked, if not pop back in the oven for 5 minutes and test again. Serve with cream or custard this is a super light, fluffy, really yummy pudding!
