Ive been picking apples from my mums allotment and made them into a delicious apple pie. I have also made the pastry which is super easy and quick.
Go out picking apples there are tons around this time of year, any type will make a perfect pie!
8oz plain flour
4 oz butter
pinch of salt
2.5 tbsp cold water
6/7 apples any type I like a few to be cooking apples to keep it tart.
1 oz sugar
zest and juice of half a lemon.
4 tbsp water
In a large bowl add the flour, butter and mix with your hands into breadcrumbs – don’t over handle it, pastry is best kept cold.
Mix in the water fold together to form a dough it shouldn’t be to sticky or to dry.
Set aside the pastry in fridge in some cling film.
Peel, core and chop the apples.
Cook the apples in a saucepan with the water, lemon zest, juice and sugar until soft about 10 Min’s. Turn off the heat. Set aside some pastry for the apple pie lid.
Roll out the rest of the pastry onto a well floured surface transfer it and press into a greased pie tin. Trim the excess pastry off the tin leaving some over hang.
When the apples have cooled pour them into pastry filled tin. Roll out a circle shape for the lid and crimp round the edges with your fingers to seal the pie and to make it look pretty. Glaze the pie with a beaten egg to make it shine once cooked.
Cook at 180c for 20/25 Min’s until golden brown. Serve with cream or custard – its a firm family favourite here! Give it a go.
